"Knock-Off" Subway Oatmeal Raisin Cookies


When I worked at a shady call center last winter the highlight of my day was always running across the street and grabbing a Subway coffee and an oatmeal raisin cookie. The coffee certainly wasn't the best, but the cookies were soooo yummy... It made five hours of being yelled at and hung up on almost worth it. After trying out a few recipes yesterday using instant oatmeal packets in cookies, I accidentally stumbled upon a cookie that's taste and texture was identical to that of a Subway cookie... as it turns out, those flavored instant oatmeal packages make incredible cookies. The recipe is pretty simple and the cookies stay chewy days after they've cooled.

Ingredients
  • 1/2 cup butter (soft or nuke for 30 sec)
  • 1/4 cup white sugar
  • 1/2 cup brown sugar
  • 1 Tbs. milk
  • 1 egg
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 Tbs. cinnamon
  • 6 packets maple brown sugar instant oatmeal
  • 1 cup all-purpose flour
  • 1/2 cup raisins


Directions
Preheat your oven to 350°. Beat the softened butter with the white and brown sugar in a large bowl until completely combined, then add the milk and egg until smooth. Slowly begin to mix in the baking powder, baking soda, and cinnamon, being certain that they are fully incorporated before adding the oatmeal. Once you've stirred in all six packages, mix in the flour 1/4 cup at a time. (If you have a stand mixer, after creaming the butter, sugar, eggs and milk, you can whisk together the dry ingredients in a separate bowl and slowly incorporate both mixtures together at once.) Pour in raisins and knead dough until incorporated.

Roll in to fairly large balls and flatten on to greased baking sheet about 2 inches apart.

Bake for 10 minutes and leave to cool on sheet for about 2 minutes. Transfer to cooling rack and allow to cool completely... they are worth the wait. Should make about 15-20 cookies.

My boyfriend hates raisins, because he's ridiculous, so I got these cookies all for myself and I did not regret it one bit. They are so perfect with a cup of coffee on a cold Winnipeg morning. There's something about fall and bad coffee that makes me feel so relaxed :)

Peanut Butter Instant Oatmeal Cookies




These cookies are soft and moist, surprisingly filling, and ridiculously easy to make. I always buy the variety pack of instant oatmeal but rarely use the regular flavored packages, so this is a great way for me to use them up rather than let them sit in the cupboard for eternity. Try crunchy peanut butter instead of smooth for extra 'hearty' cookies.

Ingredients
  • 1 Egg
  • 1/2 Cup White Sugar
  • 1 Cup Peanut Butter (Smooth OR Crunchy!)
  • 3 Packets Instant Oatmeal (Regular)
Directions
  • Preheat oven to 325°.
  • Mix peanut butter, sugar, and egg in a large bowl until combined.
  • Add 3 packages of instant oatmeal and mix, again, until well combined.
  • Spoon batter onto ungreased baking sheet 2 inches apart, and flatten slightly with a fork.
  • Bake for fifteen minutes, and let cool on sheet for 5 minutes.
  • Transfer to cooling rack to cool completely.
