Peanut Butter Instant Oatmeal Cookies




These cookies are soft and moist, surprisingly filling, and ridiculously easy to make. I always buy the variety pack of instant oatmeal but rarely use the regular flavored packages, so this is a great way for me to use them up rather than let them sit in the cupboard for eternity. Try crunchy peanut butter instead of smooth for extra 'hearty' cookies.

Ingredients
  • 1 Egg
  • 1/2 Cup White Sugar
  • 1 Cup Peanut Butter (Smooth OR Crunchy!)
  • 3 Packets Instant Oatmeal (Regular)
Directions
  • Preheat oven to 325°.
  • Mix peanut butter, sugar, and egg in a large bowl until combined.
  • Add 3 packages of instant oatmeal and mix, again, until well combined.
  • Spoon batter onto ungreased baking sheet 2 inches apart, and flatten slightly with a fork.
  • Bake for fifteen minutes, and let cool on sheet for 5 minutes.
  • Transfer to cooling rack to cool completely.
